Champagne, also called Golden Celeste, is a cross of Malta and a Capri-type fig developed by Dr. Ed O'Rourke of Louisiana State University, who has reportedly said this is the fig he considers his personal best release from LSU's breeding program — a genuine, direct endorsement from its own breeder. The fruit is a deep golden yellow, similar in size and shape to a large Celeste, with tan to caramel pulp that is very sweet and tender; it has a mostly closed eye that resists spoilage even in wet weather, and typically ripens about a week after the Malta variety. The tree is a vigorous, upright grower with palmate, 5-lobed leaves.
