Fairtime was bred in California, released in 1957, developed specifically as a late-season commercial peach variety intended to extend California's fresh peach marketing season well into September, considerably later than most standard commercial varieties available at the time. The fruit is notably large and firm, with an attractive yellow background and red blush coloring, and its firm flesh made it well suited to the commercial shipping and extended handling that late-season marketing required. Fairtime's flavor is rich and sweet with good balance, generally considered solid and reliable rather than exceptional, reflecting breeding priorities that emphasized late-season timing and shipping durability at least as much as pursuing the absolute highest possible flavor complexity. The tree is vigorous and productive, well suited to California's Mediterranean-style growing climate. Fairtime ripens quite late in the peach season, generally among the last peach varieties harvested in most California growing regions, providing genuinely valuable season extension.
